About 安徽菜

徽菜是中国汉族八大菜系之一，只指徽州菜。徽菜来自徽州，离不开徽州这个特殊的地理环境提供的客观条件。徽州，府治歙县，古徽州包括今安徽省黄山市(除黄山区原太平县)、绩溪县及婺源县。徽菜在南宋年间发端于徽州歙县，徽州因处于两种气候交接地带（北亚热带季风性气候与北亚热带湿润性气候交界处），雨量较多、气候适中，物产特别丰富。黄山植物就有1470多种，其中不少可以食用。野生动物，栖山而息，徽州是山区，种类就更多。山珍野味，构成了徽菜主佐料的独到之处。主要名菜有“火腿炖甲鱼”，“红烧果子狸”、“腌鲜鳜鱼”、“黄山炖鸽”等上百种。
